Smoky Chipotle Butternut squash spread
240g butternut squash
1 tbs olive oil
1 garlic clove
Pinch mineral salt
Fresh cracked black pepper
5g smoked chipotle paste
40g lemon juice
35g Tahini paste
Method
Heat the oven to 180°C
Cut the squash into bite size pieces, put in a bowl and mix with a tablespoon of olive oil, salt and pepper to taste.
Add the whole unpeeled garlic clove, and put onto a baking sheet and pop into the oven for 25 minutes until the squash is slightly browned and soft.
Once done, pop the garlic clove out of its skin and put into a blender with the squash and the other ingredients and blend until desired spread consistency.
Serve with warm pitta breads & blanched long stem broccoli as a starter.
