Do you ever look at your box of dusty looking muesli and wish it was granola?

A delicious crunchy accompaniment to yoghurt, fruits or as a sneaky snack?

Well, here’s how to do it!

INGREDIENTS

1 large egg white

2 tablespoons neutral oil (such as untoasted sesame oil, rape seed oil)

200 grams Swiss style muesli

1tbs maple syrup or agave- optional

METHOD

I made mine in the air fryer on the bake format. Otherwise, just use your fan oven and preheat it to 140 °C

Whisk the egg white in a large bowl until it is light and fluffy.

Stir in the sunflower oil.

Pour in the muesli and stir until the cereal is coated in the egg white mixture.

Now spoon onto a baking sheet – if you like clusters, squash a few handfuls of the muesli into rough shaped balls and bake in the centre of the oven for 25 minutes, stirring once after 10 minutes. After 20 minutes, you can dribble over a tablespoon of agave or maple syrup.

Leave the granola to cool completely on the baking tray before transferring into an airtight container.

This cereal will keep crunchy for several weeks, if kept airtight.
